Jackie Hartlaub has garnered a TikTok following of 6.4 million people because of her protein-focused recipes, and here is another viral-worthy choice.
Her Pork Egg Roll in a Bowl recipe is, well, an egg roll in a bowl. "The texture is similar to the inside of an egg roll, the cabbage softens but still has a nice bite to it," says the author of The Powered by Protein Cookbook.
The influencer adds, "It’s protein-packed because it’s built around ground pork, which gives you that classic egg roll flavor without adding a ton of extra fat. And if you don’t eat pork or want an even higher-protein option, you can easily swap in ground beef for the same great result."
She calls the 15-minute dinner a "go-to meal prep recipe." "It’s the kind of dish that actually improves overnight as the flavors blend, making every reheated serving just as good, if not better, than the first," Hartlaub adds.
Jackie Hartlaub’s Pork Egg Roll in a Bowl
1 Tbsp. canola oil
1 lb. ground pork
4 scallions, chopped, white and green parts separated
4 garlic cloves, minced
1 tsp. minced fresh ginger (from 1 [½-in.] piece)
1 tsp. garlic chili oil
1 (16-oz.) pkg. coleslaw mix or ½ large (3-lb.) head cabbage, shredded
⅓ cup lower-sodium soy sauce or coconut aminos
1 tsp. toasted sesame oil
Chopped peanuts and sesame seeds (optional)
1. Heat canola oil in a large skillet or wok over medium high. Add pork; cook until browned, 5 to 7 minutes, using a spatula to break up any large pieces.
2. Add white parts of the scallions, garlic, ginger and garlic chili oil to skillet; cook, stirring often, until fragrant, 1 to 2 minutes. Add coleslaw mix, stirring to incorporate. Cook, stirring often, until vegetables are tender, 5 to 7 minutes.
3. Add soy sauce and sesame oil to skillet; stir to coat. Cook until all liquid is absorbed, 2 to 3 minutes. Garnish with green parts of scallions, peanuts and sesame seeds, if desired.
